Chef Kenichi Kanauchi meticulously prepares an omakase course using seasonal ingredients, drawing on his extensive experience and skills. Additionally, we provide a full order course where we listen to your desired ingredients and cooking methods in advance.

On the day of your reservation, Chef Kanauchi personally sources fresh, top-quality ingredients to create a unique course that ensures your satisfaction.

Chef Kenichi Kanauchi

Kenichi Kanauchi began his culinary career in his hometown of Miyagi Prefecture, gaining experience at renowned establishments such as the Hotel New Otani and various famous Japanese restaurants. He later served as the head chef at Japanese restaurants in prestigious hotels around the world, including the Shangri-La Hotel in Beijing, Dusit Thani in Manila, and the Hilton Hotel in Dubai. Utilizing the skills and experiences he has cultivated, he has taken on the role of Executive Chef at Shinbashi Ren. He looks forward to warmly welcoming all guests and providing a special omakase experience.
